A collaboration between Stuart Greenhill  from Fenton Street Distillery – who distils 310 meters above sea-level as his aspirations for his products are that hight and Mike from Maison Aotearoa who has studied the centuries-old European preserving techniques and is the only foreigner to have the honor of PAACT into the Confrérie du Jambon de Bayonne as an active protector of the salted air-dried ham
